Do you like asparagus? Bell peppers? How about broccoli or brussels sprouts? Butternut squash? Cabbage, carrots, cauliflower or corn? Green beans or kale? Onions? Potatoes or sweet potatoes? Tomatoes? Yellow squash or zucchini? Chances are, you just might like some of these foods more than you thought. And it’s always worth giving them a try. Once you try roasted vegetables, you’ll be hooked for life. It makes health eating much more enjoyable!
You can make the veggies your entire meal or serve them with a whole grain or a protein. They go with anything. All you need are the veggies, some olive oil, a baking sheet, seasonings, salt, and pepper.
Instructor Pat Abelson will show us what to do in the kitchen (in the Community Center’s kitchen), you’ll get to sample whatever you’re brave enough to try, and she’ll send you home with a recipe and some veggies so you can give it a try at home. Pat is a wife, mother, sister, friend, program manager (at Vanderbilt University Medical Center), vegetarian, and a really good cook!
